December 22 – Advent Calendar
Time for making it easier at the end of the week!!
We are making a casserole … Making it easier for the next few days. Here is a YUMMY ONE!!!
Brown 1 pound Hamburger with one onion. Add 2 cans of black beans and 1 can of diced chopped tomatoes, 1/2 c of green enchilada sauce and garlic and pepper to taste. Let simmer and bubble.
Blend 1 block of Cream Cheese and 1 medium can of diced chilies. Stir in Cilantro to taste. Spread evenly on 12 flour tortillas, folded in half with the mixture on the inside and layer them in a 9×13 glass dish.
Pour the meat mixture over the top of the tortillas. Add a layer of cheese, a layer of plain tortillas, another layer of cheese and the rest of the enchilada sauce that you have left over. (I normally buy a meduim size can.
Bake for 40 minutes on 350 or until the middle if hot and bubbily.
Serve with Sour Cream and guacamole.
By the way… this freezes AWESOME!
